Many studies have been conducted on the research of flavonoid and phenolic components found in Russian blueberries. However, there are not enough studies on anthocyanin content and antioxidant capacity. Russian blueberry fruit in processed form is a fruit that is frequently consumed in European countries. For this purpose, total phenol, total flavonoid, anthocyanin and antioxidant activities of 14 types of blueberry fruits were analyzed. Total antioxidant activity was determined by ABTS and DPPH antioxidant determination methods. These methods are based on the method of determining the amount of antioxidant component in the fruit by measuring the inhibition rate that occurs as a result of the reaction of oxidant DPPH and ABTS radicals with blueberry extracts containing a certain amount of antioxidant components.
Thanks to its antioxidant effects, it has been determined that it is curative in many diseases, prevents diseases before they occur, and one of the most important is that it has therapeutic properties and preventive effects in cancer. Bioactive compounds such as phenolic acids and flavonoids are behind this protective and therapeutic role. Thanks to these effects, it has come to the fore that a health statement should be made on their labels depending on their consumption. Black blueberry (Aronia melocarpa) is grown in North America. Today, it is also grown in Eastern Europe and Germany. There are two well-known types of blueberry fruits, namely red blueberry (A.arbutifolia) and purple blueberry (A.prunifolia).
Blueberry fruit is very resistant to low temperatures and for these reasons its popularity has increased more. Since it has a bitter taste, it is not consumed much without processing. They are found in processed foods such as jam, juice, concentrates, tea, and wine. They are also used as food coloring due to their intense purple color. Due to its anticancer and antioxidant capacity, the use of blueberry fruit is increasing day by day.
Compared to other blueberry fruit varieties, it has been observed that Russian blueberries have high amounts of anthocyanin component.
According to the results of the research, high levels of anthocyanin, phenolic component, flavonoid and antioxidant activity were found in the black blueberry fruit called chokeberry.
Dominant anthocyanin; It is the anthocyanin component that has the highest rate in the anthocyanin profile found in the fruit. Dominant anthocyanins; cyanidine-3-galactoside, cyanidin-3-arabinoside, cyanidine-3-glucoside and cyanidin-3-xyloside. Different amounts of antioxidant values were found in different fruit varieties. The reasons for these differences; Differences in species can be explained as the differences between production methods, processing methods and parameters, and different analysis methods.
In order to clearly determine the effect of all parameters on antioxidant activity, all conditions from raw to final processing should be examined in detail and antioxidant analyzes should be performed. Studies on these issues are promising. In addition, we will have the opportunity to add new information to the literature on health and nutrition by having information about the bioavailability of bioactive components in this fruit, with in-vivo and in-vitro bioavailability studies.
